Ice Candy, known in the Philippines as a coconut popsicle, is a traditional frozen dessert made with coconut milk, condensed milk, young coconut strips, and coconut water. The mixture is poured into slender plastic bags and frozen until it’s ready to be enjoyed. While young coconut strips and juice are the original base ingredient, Filipinos have experimented with using different types of Philippine fruits to create ice candy or coconut popsicles. Some popular flavors include mango, avocado, ube, and many more.
Missy’s Avocado Popsicle, on the other hand, has a unique twist that sets it apart. This recipe is definitely not intended for kids as it’s mixed with a small amount of agave, a substance commonly used in alcoholic drinks. We apologize to the little ones out there! Perhaps we should make our original Filipino Avocado Popsicle soon, without the twist!
Ingredients: 4-6 servings
2 medium ripe avocados
1 1/2 cups coconut milk
1 oz. fresh lime juice
1 medium ripe banana
1 tbsp. agave
Instruction:
- Simply combine all ingredients in a blender or food processer until smooth and creamy.
- Pour mixture into ice pop molds, and set in freezer overnight. Serve Avocado Popsicle as a yummy dessert after a delicious lunch meal!
