This versatile and nutritious food source can provide essential sustenance in challenging situations.
For outdoor enthusiasts and homebodies alike, it is crucial to remember that natural disasters don’t discriminate. To ensure you’re prepared, carry a can opener, a small knife, some garlic, onions, salt, pepper, a tomato and a small pan whenever possible. With these simple tools, you can create a sautéed sardines dish that will stave off hunger until help arrives.
While the aroma of sardines may not appeal to everyone, Filipinos have developed a clever technique to reduce the fishy smell and transform the humble canned sardine into a delicious meal. Millie’s Ginisang Sardinas, or Sautéed Mackerel Sardines, is the perfect example of how a simple recipe can elevate canned sardines into a tasty and satisfying dish, even in the most challenging circumstances.
Ingredients: 2-3 servings
1 or 2, (5.5 oz.) cans of Mackerel sardines(preferably Ligo brand)
1 whole, diced tomato
1 stalk of bok choy (pechay) sliced
1/2 medium, sliced onions
1 clove, minced garlic(optional garlic powder)
salt & pepper to tasteful
1 tbsp. cooking oil
1/4 cup water (optional)
Cooking Procedure:
- Simply open can of sardines, dice tomato and slice onion, mince and chop garlic. Clean and slice bok choy or pechay leaves, as well.
- Heat up oil on a pan and sauté garlic, onions and tomatoes. Mash tomatoes to allow obtain its juice. Add 1-2 cans of Ligo sardines and stir to combine, thoroughly. Leave it so simmer while stirring occasionally.
- Apply pechay slices, stir to completely combine ingredients. Continue to simmer for at least 2 minutes.
- Season with salt and pepper. Add some water as desired. Stir and let it simmer for another 3 minutes while stirring occasionally.
- Serve Ginisang Sardinas(sautéed sardines) hot, with steamed rice or a piece of bread for breakfast, or a glass of water for lunch or dinner. Oh yummy!
Tip: Millie used “Ligo” brand for her tomato-sauced sardines. They are available on the Asian section at the general stores once-in-while. Best place to find it is at the Asian market. You can use other brands if Ligo is not available. Remember to turn your kitchen fan to a blast, if you’re sensitive to sardines smell. Try adding scrambled eggs with your sautéed sardines. It’s delicious!
