Served hot or warm for snacks or breakfast, this simply delicious Puto is usually paired with another dish when eaten. This steamed rice muffin is one of many Filipino rice cake recipes that great with hot cocoa or coffee. There are different varieties of how Puto is made and what we have is just another kind of the many Filipino rice cake recipes. A great-tasting Puto is made fluffy, soft to taste! Millie’s simply delicious Puto or Steamed Rice Muffin is just the way everyone likes it.

Ingredients: 1-2 dozens muffins.

2 cups rice flour & sweet flour combo
2 large eggs, beaten
2 tbsp. baking powder
1 cup water
1/2 cup white sugar
1/2 cup melted margarine(butter optional)
1/2 cup evaporated milk
1/2 cup cheddar cheese for topping
2 drops of yellow 5

Steaming Procedure:

  1. On a large mixing bowl, combine flour, baking powder and sugar. Gradually add in water, milk, eggs and butter or margarine. Apply 2 drops of yellow 5, beat thoroughly until ingredients are completely mixed together. It will produce a lathery texture when battered.
  2. Pour the batter into the cupcake molds until nearly full. If you’re using a multiple layered steamer, place the cupcake molds in batches. Leave a tiny space in between molds on each steamer basket.
  3. Place a cloth in-between each basket to avoid water drips from the steaming top, if necessary.
  4. Add about over a half amount of water on the bottom steamer itself, for the Puto to steam, apply 1 tablespoon of vinegar to the water.
  5. Let it start steaming for 20-25 minutes. Puto will appear smooth and fluffy-soft when done.
  6. Remove from tray and mold while hot, add the cheese flakes on top of each muffin. Follow the same step for the remaining mixture.
  7. Let it cool off or warm to touch, prior to serving. Serve hot with your favorite breakfast drink.

Oven Steaming/Baking:

  1. Preheat oven to 350F. Fill out a deep baking pan with water. Place pan on the bottom oven rack.
  2. Pour the battered Puto mix on each greased mold of a muffin pan. Wait for the water to start steaming inside the oven.
  3. Use the middle rack  as a barrier between the muffin pan and the deep pan with water, that you’re using as your steamer.
  4. Place the Puto filled muffin pan on top of the middle rack. Bake/steam Puto for 20-25 minutes. Use a toothpick to check if Puto is done.
  5. Top each of these steamed rice muffins with grated cheese flakes and serve hot.
