Bangus(Milkfish) is originally the main ingredient for a Fish Sinigang recipe. Millie however, finds it easy to alter it with Halibut, which turns out to be a great substitute to Bangus. A Sinigang(sour soup) can be done with different ingredients. The most common ingredient is probably pork belly. Others use chicken and obviously, there’s the fish sinigang. Millie’s Sinigang na Halibut is boiled with significant amount of fresh tamarind juice with onions, garlic, tomatoes and ginger. She added pechay(bok choy) leaves and a piece of Anaheim pepper to perk up its flavor. She definitely makes the best Sinigang na Halibut or Halibut Soup, which we recommend for you to try.
Similar to Flounder, Halibut in the Philippines belongs to a type of fish called “Dapa”, which is sold in the greater Manila areas. You ought to try Millie’s Sinigang na Halibut(halibut soup). No doubt, you’ll love the taste of her fish sinigang(sour soup) recipe.
Ingredients: 3-4 servings
1 whole, large Halibut cut into 4 parts(bone-in)
2 bundles of bok choy sliced in halves
1 bundle of spinach leaves(optional)
1 small cut, sliced ginger root
1/2 cup sliced radish
1/4 cup sliced onions
3 cloves garlic, crushed
1 medium, sliced tomatoes
1/2 a packet tamarind sauce(sampaloc mix)
1 small Anaheim pepper
2-3 tbsp. fish sauce
salt & pepper to taste
2 tbsp. cooking oil
3-4 cups water
Cooking Procedure:
- On a deep skillet, heat the oil, add onions, garlic, tomatoes and ginger. Sautee for a couple of minutes, then slide the halibut slices on to the skillet and mix with the first ingredients. Let it simmer for 15-20 minutes.
- Add all vegetables next, including the Anaheim pepper, pour 3-4 cups water. Cover skillet and let it boil for at least another 10 minutes.
- Pour the Sinigang mix or tamarind sauce, the season it with salt and pepper. Leave it boiling for another 3 minutes. Turn off the heat when cooked. Serve Millie’s delicious Sinigang na Halibut(Halibut soup) recipe hot, with steamed rice. Use the fish sauce with a squeeze of lime or lemon, to add more flavor to taste.
Tip: If you’re using fresh tamarind, boil it, squeeze juice onto the cooking pot while dish is cooking. Use a strainer to separate the seeds and pulp from the juice. Careful with the fish bones when you eat a fish sinigang(sour soup). Otherwise, enjoy!
