This coconut coated shrimps fries is a meal preparation that’s quick and simple, but what gives you is a succulent-rich flavored, shrimp appetizer you can serve, prior to lunch or dinner. I’m talking about this crispy on the outside, juicy-tender in the inside, with a shy taste of sweetness, Coconut-Fried Shrimps that Millie just made – it’s heaven sent!
Ingredients: 3-4 servings
2 lbs. fresh shrimp prawns
1(12 oz.) pack, shredded coconut
1/4 cup all-purpose flour
2 whole eggs, beaten
1 cup cooking oil
salt & pepper to taste
Cooking Procedure:
- Wash and clean shrimp prawns, devein and remove shells except the tails.
- Empty the pack of shredded coconuts into a large bowl. Mix it with flour and add the shrimps. Season with salt and pepper. Add battered eggs, then thoroughly combine all ingredients.
- Heat up cooking oil on a wide, deep pan over medium to high. Carefully drop seasoned shrimp prawns, one after the other. Cook until golden brown.
- Drain excess oil on a towel covered strainer, prior to serving. Serve Coconut-Fried Shrimps hot, with either teriyaki or sweet & sour sauce on the side.
