Ginataang Alimango is just one out of a few Filipino favorite crab recipes; boiling fresh crabs in coconut milk, just as what Millie did with her Ginataang Alimango recipe. Dungeness Crabs cooked in coconut milk, along with sitaw(long beans) and summer squash. Adding squash creates that sweet-tasting, thick crab sauce, which makes it flavorful to taste.

Ingredients: 3-4 servings

3-4 fresh Dungeness crabs
a quarter half of squash, cut in medium cubes
1 bundle of sitaw cut in 1 inch length or longer
1(8 0z) large can of coconut milk
2 cloves minced garlic
1/2 medium sliced onion
salt & pepper to taste
1 1/2 cups water

cooking Instructions:

  1. Wash and clean Dungeness crabs. Remove its antenna, cut them in halves and set aside. Skin off squash, remove seeds and chop in medium cubes. Wash and clean the sitaw(long beans), remove the edges end and the thin strip around the bean edges. Cut them at an inch length or longer. Set aside.
  2. On a deep, heated pan, pour 1 1/2 cups of water, add the can of coconut milk, minced garlic and sliced onions. Wisk to combine ingredients, then bring it in to boil for 5-10 minutes, while occasionally stirring. Season with salt and peppers.
  3. Add the Dungeness crabs next. Carefully combine with the rest of ingredients. Let it simmer for 30-35 minutes, while stirring occasionally, until Dungeness crabs turn almost red-orange in color and its meat is fully cooked. Add more water if desired.
  4. Add squash cubes, stir to combine ingredients and simmer for about 10-15 minutes. Apply the sitaw(long beans), continue to stir for another 5 minutes until long beans are soft and squash are mushy-soft. Sauce thickens and slightly drained when all is cooked. Add more salt and pepper if needed.
  5. Remove from the heat. Transfer sweet and delicious, Ginataang Alimango with Squash & Sitaw on a large bowl. Serve hot with steamed rice.
