Just as many sautéed recipes as Millie has, here’s another popular Filipino recipe she wants to share as part of her Ginisa dishes. Ginisang Upo sa Giniling na Baboy, or Sautéed Bottle Gourd in Ground Pork in English is similar to other sautéing preparations, we always start with onions, followed by garlic and then tomatoes, and lastly, the choice of meat is applied… this time it’s ground pork.
The meat is sautéed and simmered until almost cooked, then bottle gourd or upo is added to the mix, sautéed, seasoned, water is applied and simmered once more until all ingredients including the upo or bottle gourd are fully incorporated and cooked. Millie wanted this Ginisang Upo sa Giniling saucy, so she added more water than her previous sautéed bottle gourd cooking.
Ingredients: 4-6 servings
1 large bottle gourd(upo), thinly sliced
1 lb. of ground pork
2 cloves of minced garlic
1 small, sliced onions
1 large sliced tomatoes
1 tbsp. of garlic powder(optional)
1 tbsp. of fish sauce
2 cups of water
1 tbsp. of cooking oil
1-2 stalks on spring onions(scallions)
Cooking Procedure:
- Skin off and cut upo(bottle gourd)in 4 quarters, slice each in fairly thin width sizes, then set them aside. Process all other ingredients accordingly.
- On a large cooking pan sauté garlic, onions and tomatoes on a heated oil, until garlic and onions are browned, and tomatoes are mashed, producing its juicy sauce.
- Add ground pork to the mix, stir to thoroughly incorporate, apply salt and pepper, stir once more, then close the pan with its lid to let the mixture simmer for at least 5 minutes until the meat is fairly cooked or browned.
- Add the bottle gourd or upo slices into the mixture, sauté for a couple of minutes before closing it once more to simmer for 5-8 minutes, until upo is almost cooked.
- Add any amount of water depending on your liking, whether you prefer it saucy or not so much. Apply about a tablespoon of fish sauce. Mix thoroughly to completely incorporate.
- Leave it to boil and simmer for another 5-8 minutes without applying the pan cover(lid). Let some of the water evaporate, allow the sauce to thicken prior to serving.
- Top it with chopped scallions or spring onions. Stir to mix together ingredients and let it simmer for a minute or so.
- Remove from the heat, serve this goody, Ginisang Upo sa Giniling na Baboy or Sautéed Bottle Gourd in Ground Pork with steamed rice, enjoy!
Note: Ginsang Upo or Sautéed Bottle Gourd is usually served with a side dish, either with fried meat or fish of some kind. It can be fried mackerel or tuna fish, or fried adobo dish, your choice.
