Filipino Adobo is a classic dish that generations of Filipinos have enjoyed. It is a dish that has evolved over time, with variations in ingredients and cooking methods depending on the region or the cook’s preference. Adobo, derived from the Spanish word “adobar,” refers to marinating meat or vegetables in a mixture of vinegar, salt or soy sauce, and spices such as garlic, crushed peppers or peppercorns, and bay leaves.
While the essential ingredients of adobo remain the same, each cook has their way of preparing the dish. Some may use more or less vinegar, soy sauce, or salt, while others may add different spices or herbs to create a unique flavor profile. This versatility makes adobo a beloved dish in the Philippines and beyond.
Ludwig, a talented cook, has his version of the classic Filipino Pork Adobo recipe. He adds a famous ready-to-use adobo seasoning to enhance the flavor of his Adobong Baboy. This seasoning adds a depth of flavor to the dish, making it more delicious and savory.
Ludwig starts to make his Pork Adobo by marinating the pork in a mixture of soy sauce, vinegar, and adobo seasoning for a few hours or overnight. The pork is then browned in a pan along with garlic and onion. The marinade is then added to the pan and simmered until the pork is cooked and the sauce thickens.

Ingredients: 4-6 servings
2 lbs. pork belly meat in cube sizes
3 cloves of garlic, dice cut
4 tbsp. of soy sauce
3 tbsp. of vinegar
3 pieces dried bay leaves(laurel)
1 tbsp. of black peppercorns
3 tbsp. of brown sugar
1 sachet(8 gm) of Magic Sarap seasoning
1/2 tsp of cooking oil
water
Cooking Procedure:
- Clean and cut pork belly meat in small cube sizes, then set aside. Process all other ingredients accordingly.
- On a cooking pan or pot, sauté garlic on a heated cooking oil until browned. Add the pork belly cubes and stir to combine. Let it simmer for at least 5-8 minutes until pork belly is browned.
- Add 3 cups of water, thoroughly stir to completely mix all ingredients, then bring it in to a boil. Apply all other ingredients.
- Stir to combine for 1-2 minutes, then continue to let it simmer for about 20-30 minutes until the Filipino Pork Adobo sauce turns thick and pork belly cubes are completely cooked. Serve hot with steamed rice.
Note: As we all know a lot can be added to perk Adobong Baboy flavor. I usually apply boiled eggs to mine, others add some potatoes and I’ve seen a few Adobo recipes with black beans.
