Ginisang Talbos ng Kamote sa Hipon is a rare type of Filipino recipe which is simple to make, but provides health benefits that a few may know. Talbos ng Kamote is the Tagalog term for sweet potato leaves. Also called “Dawn Kamote” in Bicol, sweet potato leaves are known to provide a list of healthy nutritional values including Iron, vitamin B-6, Magnesium, dietary fibers and Potassium, just to name a few.
Talbos ng Kamote or Dawn Kamote can be cooked in a few ways. They can be stir-fried, used for Enchiladas, cooked in coconut milk, or sautéed just like Millie did with her Ginisa recipe. Preparing Sautéed Sweet Potato Leaves with Shrimps, or Ginisang Talbos ng Kamote sa Hipon is a quick process. Using shrimp prawns as her meat ingredient, Millie simply sautéed the sweet potato leaves in the usual spices such as, garlic, onions, tomatoes and spiced it with salt and pepper to taste. It’s just one of the quick ways to serve you with a healthy meal for lunch or dinner!
Ingredients: 3-4 servings
1 bundle of young, sweet potato leaves
2 lbs. fresh shrimp prawns
1 large diced tomato
2 cloves, minced garlic
1/2 medium sliced onion
salt & pepper to taste
1/2 cup of water
2 tbsp. cooking oil
Cooking Procedure:
- First, wash and dry stalks of bundled sweet potato leaves(talbos ng kamote), select and pick fresh young leaves from each stalk and set aside.
- Wash, clean and devein shrimps, remove all the shells and set aside. Chop and slice all other ingredients.
- On a large cooking pan, heat cooking oil at medium temperature, start sautéing garlic, onions and tomatoes. Stir to combine for 1 minute.
- Add the shelled shrimps next. Stir to combine with the spices thoroughly. Leave it to simmer for 3-5 minutes until they turn pink in color.
- Apply the sweet potato leaves or talbos ng kamoteng kahoy, stir to combine, apply salt and pepper to season, then let it simmer for 5 minutes.
- Apply a small amount of water to create some sauce, let boil for 2 minutes or until shrimps and talbos ng kamote are cooked.
- Remove from heat and serve hot with steamed rice and fried fish for a side dish, which in this recipe, Millie fried Lapu-lapu fish for her side dish.
Note: For more flavorful taste, serve Sautéed Sweet Potato leaves with Shrimps(Ginisang Talbos ng Kamote sa Hipon) with fish sauce and calamansi juice.
