Ingredients: 4-6 servings

1 1/2 kilos pork(liempo) slice into small cubes
2 pouches of coconut milk
3-4 cups of bagoong alamang(shrimp paste)
3 cloves chopped garlic
1 large red onion, chopped
1 sachet(4-6 pieces)of dried basil leaves(sangkap)
1 teaspoon salt
1 teaspoon black pepper
15-20 pcs of red hot chili peppers chopped in small sizes
2 sachets of Magic Sarap seasoning

Cooking Procedure:

  1. First make sure bagoong alamang’s salty taste is reduced by simply spraying it with cold water, on a strainer.
  2. Combine all ingredients into a large cooking pan except for the chopped red hot chilis. Heat up the stove to medium-hot, bring coconut mixture(ingredients) in to a boil while constantly stirring.
  3. Let the mixture simmer for 20 mins until the coconut milk thickens. Apply the chopped chili peppers and continue to let it simmer for another 10 mins, while occasionally stirring.
  4. When the liempo(pork belly cubes) turns out fork tender, coconut milk is almost oily dry and thickened, while chili peppers are slightly softened, that concludes, your Bicol Express recipe is done and ready to serve. Serve it hot with steamed rice.

Note: Always remember to reduce the sodium amount of your bagoong alamang(shrimp paste) for health purposes. Consider the salt seasoning to be an option for better Bicol Express flavor.
