Bananas are considered one of the most popular healthy snacks, specially in America. Most of us love that distinctive sweet taste this fruit provides, besides the fact that it is one of the healthy snacks or dessert one can consume. The only thing is, bananas can only taste great to most up to a certain point. When they over ripe, they are no longer enticing for most of us to eat.

Here’s a great idea on how to avoid wasting bananas when they get to that point of over-ripening. Let’s not waste such a valuable product and make use of it for good. Try making Millie’s great-tasting, cake-like banana bread at home. It is so moist and delicious, you wouldn’t just want one piece, but we advice that you eat in moderation.

Ingredients: 8-10 servings

4 pieces of ripe bananas
1 1/2 cups of all-purpose flour
3/4 cup of white sugar
1 tsp baking soda
1/4 tsp of salt
1 tbsp. vanilla extract
1 large egg
1/2 cup of melted butter

Baking Instruction:

  1. Preheat oven to 375F. Grease a round, 8×3 inches pan to prevent the bread from sticking to the pan. Melt butter and set aside.
  2. Using an automatic cake mixer, combine all ingredients including the melted butter. Run the mixer on a high speed until all ingredients are thoroughly mixed and turns soft and fluffy in texture.
  3. Pour all ingredients into the round baking pan(8x3inch), then bake the delicious, homemade banana bread at 375F for 30 minutes.
  4. Immediately remove from heat when done, to preserve its moist, soft and fluffy cake-like, Banana Bread texture. Cool it off prior to slicing each piece and serving this deliciously moist, soft and fluffy, Cake-Like Banana Bread. Enjoy!

Tip: If you wish to check if the bread is properly baking or if the liquid from the bread is properly draining, use a barbecue stick or knife, prick the center of the bread. Pull stick or knife quickly. Stick or knife must be cleaned and should have no when pulled and checked.

Note to only try it once. Opening the oven lid more than once will prevent the bread to rise. Adjust the baking time for 1-2 minutes if banana bread is still wet. Remove immediately, to preserve a soft and fluffy, cake-like banana bread texture.
