Ingredients: 4 servings
2 large Russet potatoes
1 tbsp. extra virgin olive oil
2 tbsp. butter
1 tbsp. whole milk
2oz sour cream
4 oz. grated cheddar cheese
1/8 tsp salt
1/8 tsp pepper
1/2 tsp paprika
chopped parsley for garnish(optional)
Cooking Preparation:
- Preheat oven to 350 degrees Fahrenheit. Using a fork or skewer, pierce potatoes and place, whole, on an ungreased baking sheet. Bake on center rack for one hour, or until potatoes are tender when poked.
- After potatoes have cooled completely, cut in half lengthwise. Use a spoon to scoop the inside out of each potato half (leaving about 1/2 inches for a border).
- Set aside hollowed out potatoes, and set the insides in a medium-sized mixing bowl. Add butter, milk, sour cream, spices, and 3 oz. of cheese to bowl, and mix thoroughly.
- Transfer potato mixture back into hollowed out potatoes (optional: use a piping bag with a decorative tip to create an attractive presentation). Top with remaining 1 oz. cheddar, and drizzle with olive oil.
- Bake potatoes for another 20-25 minutes, or until potatoes are crispy and the cheese has completely melted.
