Millie’s deliciously moist, soft and fluffy, homemade Walnut Banana Bread recipe with raisins, is made with selectively sweet, ripe bananas, crispy walnuts, raisins and other ingredients, then baked to perfection! It’s the perfect blend for a mouthwatering banana bread and that’s how it’s supposed to be. I’ve made a few attempts in baking my own homemade banana bread recipe, but this one beats me. And, no it’s not really a Filipino recipe but it’s worth posting due to its yumminess!
Ingredients: 8-10 servings
4-5 pieces of ripe bananas, mashed
1 1/2 cup of all-purpose flour
2/3 cups of white sugar
1/4 cup of crushed walnuts
1/4 cup of sweet raisins
1 tsp baking soda
1/4 tsp of salt
1 tbsp. vanilla extract
1 large egg
1/2 cup of melted butter
Baking Instruction:
- Preheat oven to 375F. Grease a round, 8×3 inches pan to prevent the bread from sticking to the pan. Melt butter and set aside.
- Using an automatic cake mixer, combine all ingredients including the melted butter. Run the mixer on a high speed until all ingredients are thoroughly mixed and turns soft and fluffy in texture.
- Pour all ingredients into the round baking pan(8x3inch), then bake the delicious, homemade banana bread at 375F for 30 minutes.
- Immediately remove from heat when done, to preserve its moist, soft and fluffy texture. Cool it off prior to slicing each piece and serving this deliciously moist, soft and fluffy, homemade Walnut Banana Bread with Raisins. Enjoy!
Tip: If you wish to check if the bread is properly baking or if the liquid from the bread is properly draining, use a barbecue stick or knife, prick the center of the bread. Pull stick or knife quickly. Stick or knife must be cleaned and should have no when pulled and checked.
Note to only try it once. Opening the oven lid more than once will prevent the bread to rise. Adjust the baking time for 1-2 minutes if banana bread is still wet. Remove immediately after, to preserve it soft and fluffy texture.
