Cornish hen or Cornish game hen as it is also called, although the name has nothing to do with a gaming bird. It’s just a different kind of breed in chicken. Cornish hens are tinier than the traditional chicken, but they are bred to have denser breasts, but should be tender. As I read through additional information about this bird, I learned that a couple of breeders from Connecticut have been acknowledged for how this type of bird was developed in the mid-1950s.
With Millie’s Cornish hen recipe, what she did was to simply seasoned 3 whole Cornish baby chicken with garlic powder, lots of garlic, salt and pepper and deep-fried them in a large skillet. She then served her Crispy-Fried Cornish Hen meal with potato salad, along with vegetable salad. Lovely!
Ingredients: 3 servings
3 whole Cornish hen baby chicken
4 large cloves of chopped garlic
1 1/2 tbsp. garlic powder
salt & pepper to taste
Cooking Procedure:
- Clean & dry 3 whole, Cornish hen chicken, chop 4 large cloves of garlic in tiny pieces. Rub entire chicken with spices, starting with salt, pepper and garlic powder, insert chopped garlic all over the hen. Marinate for 24 hours.
- Drop each chicken into a heated oil in a deep fryer. Fry delicious, Crispy-Fried Cornish Hen for about 15-20, or until each hen is golden brown.
- Drain excess oil through a paper towel covered strainer. Serve this crispy-fried, Cornish Hen hot, with potato salad, along with vegetable salad on the side.
Tip: You can also roast Cornish hen in the oven at 375F for 40-45 minutes, until golden brown.
