A casual meal served for lunch and dinner. Aftritada is an everyday meal sold in local Filipino carenderias and street vendors. This Filipino Chicken Goulash recipe involves sautéing of braised meat with onions, garlic and tomatoes, then simmered with several types of vegetables, until meat is fork tender.

Millie’s Chicken Afritada is her Filipino version of Hungarian Goulash in which, chicken cubes are braised with onions, garlic, tomatoes and tomato sauce. It’s then sautéed with carrots, green peas, bell peppers and spices, then served with steamed rice.

Ingredients: 6-8 servings

1 medium, whole chicken cut in cubes
6-8 pieces of skinned baby potatoes
2 large carrots cut in cubes
1 red bell pepper cut in cubes
1/2 medium onion, cut in cubes
1 cup of frozen green peas
2 cloves of garlic, minced & chopped
1/2 medium onion, cut in cubes
1 whole, sliced tomato
3 tbsp. soy sauce
1 small(8 oz.) can of tomato sauce
1 small(6 oz.) can of tomato paste
2 tbsp. white vinegar
2 tbsp. cooking oil
salt & pepper to taste

Cooking Procedure:

  1. Wash and clean whole chicken. Remove its offal or internal internal organs and skin, then cut them in small to medium cubes. Set them aside.
  2. Chop a half of medium sized onion in small cubes and do the same to the skinned carrots, red and green bell peppers and tomato. Skin and mince 2 cloves of garlic and peel off baby potatoes but leave them as they are.
  3. Set the stove heat to medium. Heat up cooking oil, then sauté, garlic, onions and tomato cubes for 2-3 minutes. Press tomato slices onto the pan, mashing it until juice appears. Apply salt and pepper to season, then stir to combine mixture.
  4. Apply potatoes next, stir to combine for a couple of minutes, then add carrots. Follow it up with tomato sauce and tomato paste. Combine thoroughly, then cover pot with a lid. Bring it in to boil, and let it simmer for about 10 minutes.
  5. When potatoes are half-cooked, add the chicken. Apply vinegar and soy sauce. Stir to thoroughly combine ingredients. Cover the pot once again and let it simmer for 15-25 minutes, while stirring occasionally.
  6. Apply bell peppers and frozen green peas, combine all ingredients evenly. Let it simmer for another 5 minutes or until chicken is browned, sauce is thickened, and vegetable ingredients are rightly cooked. Season with additional salt and pepper, if desired.
  7. Remove from the heat, transfer to a large serving bowl and serve this savory, delicious Chicken Afritada with steamed rice!
