While the Spicy Tofu Soup features carrots, the Shrimp Tofu Soup features sliced mushrooms, which add a delicious earthy flavor to the dish.

Despite the difference in ingredients, both versions of the soup share the same savory and delicious taste that’s characteristic of Korean cuisine. Janis’s Shrimp Tofu Soup is quick and easy to prepare, making it a great option for busy weeknights when time is limited.

To make the soup, Janis starts by sautéing garlic and onions in a bit of oil, then adds sliced mushrooms and cooks them until they’re tender. Next, she adds chicken broth, soy sauce, and other seasonings to the pot, along with peeled and deveined shrimp and tofu cubes. The soup is simmered until all the flavors have melded together, then served hot and garnished with sliced scallions.

Ingredients: 3-4 servings

1 pack soft tofu soup kit (pack includes a pack of small broth and soft tofu)
3 packets of tofu seafood flavored seasoning
7 cups of water
12-16 pcs of shrimp, cleaned & deveined
3 stalks green onions(scallions)
2 cups of sliced mushrooms
1/4 of a whole cabbage, sliced

Cooking Procedure:

  1. Boil the water with broth pack from tofu kit and 3 packets of seafood seasoning. Stir the boiling water occasionally.
  2. Add all the vegetable ingredients, followed with the shrimps, let it boil for and simmer for about 3-4 minutes until shrimp is cooked.
  3. Add the pack of tofu last, then let it simmer for another 1-2 minutes while stirring occasionally. Garnish it with sliced green onions(scallions). Serve this delicious, Korean Shrimp Tofu soup, while hot.
