Rice is the staple food of almost every Filipino cuisine, and no meal is complete without it. It’s always a part of every Filipino lunch or dinner meal. Sometimes we serve rice fried to add more perk to our appetite. Cook rice with shrimps, chicken, pork or simply stir-fry it with eggs, garlic and salt. Or simply create fried rice with garlic, salt and pepper alone.
For my Shrimp Fried Rice, I sautéed leftover steamed rice with garlic, added soy sauce and a little bit of the oyster sauce. I applied shrimps, carrots and green peas, then stir-fried it with chopped, scrambled eggs, until shrimps are cooked, and rice is browned.
Ingredients: 3-5 Servings
2 cups Rice, cold and cooked (left-overs)
6 shrimp prawns
4 tbsp. vegetable or corn oil
2 tbsp. minced garlic
2 stalks chopped scallions
1/4 cup carrots, chopped in small cubes
1/4 cup green peas
1/2 tsp oyster sauce
1/2 tsp soy sauce
1 tsp salt
1 tsp black pepper
1 large eggs, scrambled and chopped
Cooking Procedure:
- Brown garlic into hot oil, then add rice stir thoroughly to mix. Follow it up with the oyster sauce, soy sauce and season with crushed black peppers. Stir to combine mixture constantly, as it cooks.
- Add carrots, green peas and chopped, scrambled eggs. Apply shrimps last. Apply another half a teaspoon of soy sauce, if needed. Keep stirring to combine all ingredients until they’re cooked.
- Garnish with chopped scallions. You can also top it with chopped cilantro, if desired. Serve Shrimp Fried Rice hot.
Tip: Best type of rice you can use is Jasmine or Milagrosa. It’s enticing aroma will add to the flavor. Fried rice is also eaten for a heavy breakfast meal.
