Ingredients: 3-4 servings

1/2 lb. fettuccine noodles
1 lb. shrimp, peeled/tail-off and deveined
1/2 tsp salt
2 cloves garlic
3 tbsp. salted butter
1/2 tsp pepper
1 cup heavy cream
1 oz. fresh lemon juice
1-2 cups fresh spinach, rinsed (optional)
1/2 cup shredded parmesan cheese

Cooking Instructions:

  1. Bring large pot of water (lightly salted) to a rolling boil. Add fettucine pasta and cook according to pasta’s directions. Immediately remove from heat after it is cooked, and set aside 1/3 cup of pasta water. Strain remaining water, and set noodles back in the pot, away from heat.
  2. In a separate bowl, season shrimp with salt and pepper and lemon juice. Mince garlic.
  3. In a skillet over medium heat, melt 1 1/2 tbsp. butter, then add shrimp. Stir or flip halfway through, so shrimps are evenly cooked and pink on both sides (About 2 minutes). Remove from heat.
  4. In a saucepan over medium low heat, melt butter, then cook garlic (stirring consistently) for about 1 minute. Whisk in heavy cream and the 1/3 cup of pasta water, stirring consistently. Add parmesan cheese a small handful at a time and continue to stir until cheese is melted.
  5. Add your cooked shrimp, cooked pasta, and spinach (optional) to completed sauce, and mix until evenly coated.
  6. Remove from heat and garnish with fresh parsley and/or a little more parmesan cheese, serve with your favorite garlic bread, and enjoy!
