Cathy’s Lemon Baked Salmon recipe is nothing more complicated than simply baking marinated fresh salmon fillet, in lemon juice, salt, pepper and garlic powder. You may leave out the lemon juice from the marinade and squeeze it after it’s baked, as your option. Such a quick and easy way to serve a meal without missing the flavorful taste to it. Eat it with steamed rice and broccoli. It’s great for lunch or dinner.

Ingredients: 2-3 servings

2-3 pieces of sliced salmon fish
1-2 bundles of sliced broccoli
1 lemon, thinly sliced
1 tsp garlic powder
2 tbsp. melted butter
1 tbsp. butter
salt & pepper to taste

Cooking Procedure:

  1. Set up oven temperature to 375F. Place cleaned salmon slices on a greased baking sheet.
  2. Apply a squeeze of sliced lemons on top(save some slices), sprinkle a teaspoon of garlic powder, salt and peppers, then spread the melted butter evenly on both sides of the salmon slices. Top them with the remaining lemon slices.
  3. Place the seasoned salmon on the middle rack of the oven, then bake it for 15-20 minutes until salmon pieces turn golden brown.
  4. While Lemon Baked Salmon is cooking, place the sliced broccoli on a steamer. Steam for 5-20 minutes until broccoli are half-cooked.
  5. Apply a teaspoon of butter on the sliced broccoli and sprinkle them with salt and pepper. Combine thoroughly.
  6. When done, remove Lemon Baked Salmon from the heat, serve them with the steamed broccoli and rice, if desired.

Tip: Do not overcook broccoli, to keep its healthy, nutritional value. You can fry salmon as an alternative to baking, by simply heating up butter with 1 teaspoon of olive oil on a pan. Fry both sides of the seasoned salmon slices, until golden brown.
