Banana Cue is a classic Filipino snack that’s enjoyed by many. Saba bananas are a popular ingredient in Filipino cuisine, and their use in Banana Cue adds a sweet and fruity flavor to the dish. The addition of caramelized brown sugar creates a crispy and sweet coating that’s perfect for satisfying a sweet tooth.
Ingredients: 5-10 servings
10 pcs half-rife or ripe Saba Banana
1/4 cup brown sugar
2 cups Vegetable cooking oil
10 pcs bamboo skewers
Cooking Procedure:
- First, peel off bananas and set aside, turn heat at high temperature, then heat cooking oil onto a deep pan.
- Drop bananas to fry when oil is hot and let go for 3-5 minutes or until they turn golden brown. Pour brown sugar on the bananas while its frying, leave it for a few minutes until sugar starts to caramelize.
- Flip the bananas at least a few times to allow the caramelized sugar to coat the entire bananas. Allow it to fry a few more minute until bananas are fully coated with sugar.
- Once you’re assured bananas are fully cooked, remove all from the pan and turn off the heat. Put the caramelized bananas on a strainer to drain excess oil.
- Use a tong to pick up each bananacue to stick one or two bananas to each skewer while they’re hot. Let them cool down a bit, then they’re ready to serve!
Tip: Never overcook the sugar. Make sure they just caramelize rightly so, or they will be burned that results to bitter a taste.
