Ingredients: 2-3 servings

1 lb. skinless boneless chicken strips
1/2 dried red bell peppers
1/4 cup capers
1/2 cup artichoke hearts chopped
1/4 cup sliced mushrooms
1 tsp vinaigrette sauce
1/2 medium sliced onion
2 cloves minced garlic
1/4 cup all purpose flour
3 tbsp. cooking oil
salt & pepper

Cooking Procedure:

  1. Clean and slice skinless, boneless strips in medium sizes and season it with salt and pepper.
  2. Heat up the cooking oil on a frying pan over medium heat. Pour 1/4 cup of flour on a plate, roll the seasoned chicken strips on the flour to coat it, then fry chicken but keep it half-cooked. Remove from the pan and set aside.
  3. On the same pan, sauté onions and garlic. Add the mushrooms and sauté for a few minutes, add the artichoke hearts and dried bell peppers, followed by the capers. Apply a pinch of salt and pepper to taste. Stir to combine ingredients for 3-5 minutes.
  4. Bring the chicken back and mix it with the rest of the ingredients, simmer for at least 10 minutes or until all ingredients are fully cooked. Add a tsp of vinaigrette sauce, stir for a few seconds to mix, then remove from heat. Serve this delicious, creamy Italian Chicken & Artichoke with Capers, hot!
