Ingredients: 6-8 servings

1 pack of lasagna pasta
1 large can(24 oz.) of tomato sauce
1 large can(24 oz.) of pasta sauce
1 cup mozzarella cheese
1 cup ricotta cheese
24 oz. of spinach leaves(no stems)
1 small chopped onions
3 cloves of chopped garlic
1/4 tsp dried thyme leaves
1/4 tsp dried basil leaves
1/4 tsp dried oregano leaves
salt & pepper to taste

Baking Preparation:

  1. Preheat oven to 375F. Fill a large pot with water. Bring it to a boil, add a drop of olive oil on the water to avoid pasta to stick. Boil pasta until it’s soft but firm in texture. Set aside.
  2. On a deep 9×13 baking dish, spread a fair amount of tomato sauce, apply 2-3 layers of the pasta. Spread some spinach leaves on top, then apply a portion of entire ingredients from the mozzarella cheese, ricotta cheese, to the sauce, apply a portion of the spices then some pasta sauce, spread on top.
  3. Add another 2-3 layers of the pasta and repeat the same method until entire spinach leaves are applied. Top the last portion with the remaining mozzarella cheese and pasta sauce.
  4. Cover pasta with aluminum foil and place the Spinach Lasagna on the middle oven rack. Set the timer to 45 minutes, then bake this tasty vegetable lasagna until pasta is cooked and the cheese toppings have melted.
  5. Turn off oven and remove this delicious vegetable Lasagna from the oven. Cut a square portion of the meal and serve it individually.
