Fried rice or “Sinangag” in Tagalog, or Sinanlag in Bicol dialect is an Asian cuisine, where in most occasions, leftover steamed rice is stir-fried with scrambled eggs, garlic and usually just salt and pepper. Its ingredients actually vary depending on what part of Asia the dish is made from. A typical Sinangag or Filipino Fried Rice recipe is simply combining leftover rice with garlic and cooking oil, stir-fried until determined ready. It is commonly served with eggs and tocino or longaniza.
Also called Sinangag sa Hipon in Tagalog, Millie’s delicious Filipino Shrimp Fried Rice recipe provides a lavish combination of shrimps, corn kernels, pea pods & spices. Most people use cooking oil, but Millie uses butter for her Sinangag sa Hipon recipe. It adds a bit of a difference in taste of course, but feel free to use cooking oi, if you wish, so.
Ingredients: 3-5 Servings
4 cups Rice, cold and cooked (left-overs)
4 tbsp. Vegetable or Corn Oil
2 tbsp. Garlic, Minced
1/2 cup Green Onions, chopped
1/2 cup Carrots, chopped
1/4 cup sweet kernels
1/4 cup green peas
1 tbsp. Oyster Sauce
salt & pepper to taste
2 Large Eggs, scrambled and sliced
Cooking Procedure:
- Brown garlic onto hot oil, add shrimps and steamed rice, then stir. Follow it up with oyster sauce and season with salt and pepper. Stir constantly as they slowly cook.
- Continue to stir then add sliced onions, corn kernels, green peas and chopped carrots, then crack open and drop the eggs to combine with mix. Keep stirring to even up all ingredients until they’re cooked.
- Serve this delicious shrimp fried rice hot, you can garnish it with cilantro or mint leaves, if desired.
Tip: Best type of rice you can use for delicious Shrimp Fried Rice recipe or Sinangag sa Hipon, is Jasmine or Milagrosa. Its enticing aroma adds more to its flavor.
