Miswa or Misua is very thin type of noodle, made from wheat flour. They easily dissolve in water when cooked. They originated in a place called Fujian, in China. Filipinos cook Miswa as a soup, it’s main vegetable ingredient is usually Patola (Luffa or silk squash), sometimes with Upo(bottle gourd). Slices of meat, like pork or chicken are also applied.
Cooking Miswa is a quick and easy preparation. It starts with sautéing onions and garlic, applying the meat of your choice(in this case with pork belly strips), adding patola slices, applying salt and pepper to taste, then adding large amount of water to create the soup. Ingredients are brought in to a boiling point, before the Miswa noodles are added.

Ingredients: 2-3 servings
1/2 pack(4 oz.) of miswa noodles
1/2 lb. pork belly strips
1 large patola fruit, thinly sliced
2 cloves of chopped garlic
1/2 medium sliced onions
salt & pepper to taste
1/2 tsp soy sauce(optional)
3-4 cups of water
Cooking Directions:
- On pan boil pork belly strips in water for 10-15 until pork is browned and water drains up. Use the same pan to sauté garlic and onions until they soften. Mix it with the pork belly strips to combine.
- Keep stirring while adding the sliced patola(silk squash) into the mix. Apply salt and pepper to taste. Stir for 1-2 minutes, then add water to bring it to a boil.
- Close the pan with its lid and let the Miswa ingredients simmer for 3-5 minutes or until patola(silk squash) softens.
- Add the Miswa noodles into the simmering ingredients. Stir to combine. Continue to let it simmer for another 3-5 minutes until Miswa noodles are soften or cooked. Apply some soy sauce if desired. Add more crushed black peppers it desired.
- Turn off heat immediately when Miswa recipe is completely done. Serve it hot with crackers.
Tip: You have an option to add boiled eggs or quail eggs to the Miswa soup recipe. Adding fish sauce, instead of soy sauce is an option. Upo can be an alternative vegetable ingredient to patola if not available.
