Ingredients: 4-6 servings
2 lbs. chicken breast, cut into serving pieces
1 1/2 tbsp. of curry powder
1 medium size potato, cut in cubes
4 cloves of minced garlic
2 stalks of sliced celery
2 medium pices of carrots, cut in small cubes
1 medium size, sliced red bell pepper
2 pieces long green pepper
1 medium size, chopped onion
2 thumb-size ginger cut into strips
2 cups of coconut milk
1 of cup water
2-3 tbsp. fish sauce and ground black peppers

Cooking Instructions:
- Clean and cut chicken breasts in serving slices, peel and cut potatoes in medium size cubes, then process all other ingredients accordingly.
- Heat oil in a pan. Fry the potato and carrot cubes separately on each side, until they are slightly golden brown. Remove them from the pan and set aside.
- Using the remaining oil, sauté garlic, onion, celery, and ginger until they are slightly cooked. Add the chicken cubes, mix it with the other ingredients to combine. Sauté them until the outer part of the chicken pieces turn brown.
- Add the browned carrots and potatoes, apply fish sauce, continue sautéing for another minute or so, then pour-in the coconut milk and water. Cover the pot with its lid and leave it to boil for 2-3 minutes.
