In Bicol, we refer to it as Tinaguktok, while others know it as Adobado. However, this cherished Filipino Bicol recipe is more commonly recognized as Ginataan in Tagalog, which means food that has been stewed in coconut milk. Ginataan can be created using a diverse range of ingredients, whether it’s meat, fish, or vegetables. Regardless of the primary ingredient used, this Adobado dish typically includes a blend of spices and vegetables.
Ludwig’s Tinaguktok na Turingan is a favorite Bicol specialty, also known as Ginataang Tulingan, where Tuna Fish is slowly cooked in coconut milk. The Tuna is mixed with mustard leaves, tomatoes, a Filipino seasoning (Magic Sarap), and an array of spices, then simmered in coconut milk.
Ingredients: 4-6 servings
1 lb. cleaned tulingan(tuna fish), cut in 3-4 cubes
1-2 stalks of mustasa(mustard) leaves
2 cloves of garlic, diced
1 pc red onion, diced
1 pouch(13 oz.) of coconut milk
2 tbsp. of salt
2 tbsp. of peppercorn
3 pcs of dahon ng laurel(bay leaf)
1 pouch(28 oz.) of Magic Sarap
1 large sliced red tomato
Cooking Procedure:
- On a large cooking pan, combine all ingredients except for the tulingan(tuna fish) and mustasa(mustard) leaves. Heat up the oven to medium-high temperature.
- Bring the Tinaguktok mixture into a boil while stirring occasionally for about 5-8 minutes, until it starts to bubble.
- Apply tuna cubes, gently mix thoroughly to completely incorporate ingredients. Leave it to simmer for at least 10 minutes, while stirring occasionally. Top it with mustasa leaves, add more salt and peppers, if desired. Let the leaves cook for 2-3 minutes.
- Check if tulingan(tuna fish) is completely cooked. If not leave it steaming for a couple more minutes. When done, turn off the heat and remove Ginataang Tulingan (Tinaguktok) from the heat, then serve it hot with steamed rice. So good!
Note: Some of us prefer Tinaguktok (Adobado) or Ginataang Tulingan with slight amount of vinegar, minced ginger and pechay (bok choy). Enjoy this saucy-rich and delicious, tuna fish in coconut milk dish!
