Ingredients: 3-4 servings

1 pack Pansit Bihon noodles
2 chicken breasts, cooked & shredded
1 cup of julienned carrots
1 cup thinly sliced green beans
2 tbsp. fish sauce
2 cloves minced garlic
1/2 medium sliced onion
1/2 tsp black pepper, crushed
1 lemon, sliced in quarters
1 chicken bouillon
2 stalks chopped scallions
Water

Cooking Procedure:

  1. Unpack Bihon noodles and soak it in a large bowl of warm water. Leave it for at least 15 minutes, or until Bihon noodle is slightly softened, then drain water through a strainer. Set Bihon noodles aside.
  2. On a pot, add 2 cups of water and boil the chicken. Cool it off, then shred chicken in thin strips. Set it aside. Save the water from the boiled chicken to use it as a stock.
  3. Sautee garlic and onions with oil on a heated pan. Season with crushed black pepper and stir fry until slightly brown. Stir to combine ingredients evenly for 2-3 of minutes.
  4. Apply a spoon of soy sauce. Add carrots and green beans. Mix to evenly combine. Apply the chicken stock and let it simmer for 3-5 minutes.
  5. Apply some fish sauce and add more crushed black peppers, if desired. Thoroughly combine and let it simmer for another 5-9 minutes, then transfer sautéed ingredients on a bowl. Set aside.
  6. Bring back the saved, chicken stock, add some water, if needed, then bring it boil. Drop the Bihon(Rice noodles) noodles and let it simmer until Bihon noodles soften.
  7. Combine sautéed ingredients with the Bihon noodles. Gently mix to completely combine all ingredients. Add more salt and pepper if needed.
  8. Turn heat off. Transfer this delicious Chicken Pansit Bihon Guisado on a serving bowl. Garnish with chopped scallions, add a slice of lime or lemon on the side, then serve Janis’s delicious Pansit Bihon recipe, hot!
