Millie’s Rotisserie Chicken Salad and Berries Sandwich is a quick and easy salad prep to serve your family will love. It starts with combining all ingredient in the list, slicing the croissant in half to create the sandwich! You can either chop some lettuce with the salad mixture, or simply appy them as a sandwich layer. There is no wrong in serving it breakfast, lunch, dinner or even for snacks. You’ll love it as well.

Ingredients: yields up to 12 sandwiches

1 whole chicken ( Rotisserie or boiled)
6 Celery stalks, finely chopped
2-3 finely chopped romaine lettuce
1 small pack dried sweetend cranberries & blueberry mix
1/2 thinly sliced Onion
2-3 Cups Best Food Mayonnaise
Salt and pepper to taste

Instructions:

  1. If using raw chicken, boil it in a pot with a little salt and half of the whole onion and garlic. Once cooked, remove the bones, chop the chicken finely, and shred. Place the chicken in a large mixing bowl and set it aside.
  2. Finely chop the celery stalks and onions, and mix them in with the chicken in the mixing bowl.
  3. Add the dry ingredients, salt, pepper, and dried cranberries to the mixing bowl with the chicken and mix well.
  4. Taste and adjust seasoning as necessary. Start by mixing in 2 cups of mayonnaise, and add more as needed.
  5. Set the chicken salad mixture aside and wash the romaine lettuce. Dry and cut it into small pieces.
  6. Cut the croissants in half and add a small amount of lettuce to each one.
  7. Add about 2 to 3 tablespoons of the chicken salad mixture on each croissant.
  8. Cool and serve.

Note: It is important to mix 2 cups of mayonnaise first before deciding to add more to the chicken salad mixture.
