Suman sa Ibus is a traditional Filipino rice cake made from glutinous rice that is often wrapped in young palm leaves called “ibus” or “buri.” This dessert is popular in the Philippines and is usually enjoyed during special occasions or as a snack.
To make Suman sa Ibus, glutinous rice (also known as sticky rice or malagkit) is soaked in water, then drained and mixed with salt. The rice mixture is then carefully wrapped in prepared palm leaves, forming a tubular shape. The wrapped rice cakes are secured with twine or strips of palm leaves before being boiled in water for a couple of hours until the rice is fully cooked.
Suman sa Ibus is typically served with a topping or dip, such as sugar, grated coconut, or latik (a syrup made from coconut milk and sugar).
