Mark’s Kalderetang Baka or Beef Caldereta recipe is not the typical Filipino beef stew that is commonly made or even sold at the Philippine markets. Normally, cooking Caldereta involves tomato sauce and paste. Although the cooking process is no difference to the original Caldereta recipe, Mark on the other hand, has his own Kalderetang Baka or Beef Caldereta recipe in which, lemon-lime or Sprite has been added as part of his ingredients. This Filipino beef stew recipe intrigues me and I would love to try it the way it is.

Ingredients: 4-6 servings

2 lbs. of beef, cut in small cubes
1 green bell pepper, cut in cubes
1 large carrot, cut in small cubes
1 large potato, cut in cubes
2 tsp crushed black peppers
3-4 dried bay leaves
2-3 cloves of garlic, minced
1/2 medium, sliced onion
1/4 cup of lemon lime(Sprite)
2 tbsp. of liver paste
1 sachet Mama Sita Caldereta seasoning
3-4 cups of water

Cooking Procedure:

  1. Cut cleaned beef in small cubes, process all other ingredients(carrot, potato, onion, bell pepper, garlic) accordingly.
  2. Place the beef cubes on a large deep pot, apply some water, add all the seasoning and spices, 1/4 cup of Sprite, then mix it together. Close the pot with its lid, then bring the bee mixture in to a boil.
  3. Continue to let it simmer on a slow cook process for at least 45 minutes to an hour, or until beef tenderizes. Add more water and a small amount of leftover Sprite if needed, to keep it saucy.
  4. Add potato cubes, stir to combine for 2 minutes, then close the pot back with its lid and continue to simmer for 3-5 minutes until potatoes turn soft.
  5. Add carrots and bell peppers, keep it simmering for another 3 minutes until carrots and bell peppers are fairly cooked. Add salt and more crushed black peppers, if desired, more water if needed.
  6. When all is cooked, remove from the heat, serve Mark’s delicious Kalderetang Baka(Beef Caldereta) with steamed rice.
