Ingredients: 3-4 servings
3 lbs. pork belly slices
1/4 cup coconut vinegar
5 cloves chopped garlic
1 medium sliced onion
2 bay leaves
1/4 cup soy sauce
1 tbsp. peppercorns
1/2 cup water
1 tsp cooking oil
1/2 tsp sugar
salt & pepper to taste
Cooking Procedure:
- First, clean and slice pork belly in small cubes and set aside. Heat oil on a deep pan, toast a portion of the chopped garlic until crispy. Set aside.
- Using the same pan, add more oil if necessary. Carefully drop pork cubes in batches and fry them until they’re brown. Set aside when done.
- Using the same pan, remove excess oil, then sauté the rest of the minced garlic and sliced onions. Add fried pork next, vinegar, pepper corn and bay leaves. Stir and leave it to boil and simmer for 30-35 minutes, or until pork is fork tender.
- Add more vinegar, soy sauce and water, if desired. Apply 1/2 teaspoon of sugar and continue to stir.
- Fry the pork for 2 more minutes if you prefer a tender and crispy Garlic-Fried Pork Adobo! Garnish with toasted garlic on top, prior to serving. Serve with a bowl of steamed or fried rice.
