Cathy’s Chicken Fajita recipe starts with marinating the chicken in a blend of spices and lime juice for a tangy and flavorful taste. The chicken is then grilled to perfection along with onions and bell peppers, which add a sweet and smoky flavor to the dish. Ingredients: 3-4 servings
1 lb. of boneless, skinless chicken breast
1 green bell pepper
1 red bell pepper
1 sliced red or yellow onion
2 tbsp. Canola oil
2 tbsp. lime juice
2 medium chopped tomatoes
1 clove chopped garlic
1 1/2 tsp ground cumin
1 tsp chili powder
1/2 tbsp. chopped cilantro
1/2 tbsp. Adobo seasoning
1 tsp salt
Cooking Procedure:
- Clean boneless, skinless chicken and cut them into strips. Also slice green and red bell peppers in strip slices.
- On a bowl, combine canola oil with lime juice, garlic, cumin, cilantro, adobo seasoning and season it with salt. Add the chicken strips and thoroughly mix to evenly coat chicken with the marinade. Leave in the fridge for at least an hour to complete the marinate.
- Slice green bell peppers, red bell peppers and onions into larger strips. On a skillet, start to heat up cooking oil to medium.
- Place marinated chicken strips and fry for about 3-4 minutes on each side until chicken is browned. Remove from skillet and set aside.
- Using the same skillet, drop a tablespoon of water and scrape leftover marinade. Sautee onions and bell peppers, stir for 5 minutes.
- Warm up some foil covered, tortilla shells in a heated oven, at 325F. When bell peppers and onions are cooked, add chicken back to the skillet, or transfer them on a plate of your choice.
- Organize delicious Chicken Fajita with bell peppers and onions on the side, add the garnish of your choice, like chopped cilantro, tomatoes or Pico de Gallo, salsa, sour cream, sliced lime, and so on. Serve delicious, homemade Chicken fajita sizzling hot! Disfrutar! 🙂
