Ingredients: 3-4 servings
1 lb. pork belly
1 lb. pig ears
1/2 lb. chicken liver
1 medium red, chopped onion
3 cloves chopped garlic
3-4 large calamansi
1 medium sliced lime(optional)
1/2 cup butter
3 tbsp. soy sauce
3 tbsp. chili flakes(optional)
3 finely chopped, siling labuyo(Pinoy chili peppers)
1/2 tsp salt & pepper
1/2 of butter stick
4-6 cups water
Cooking Procedure:
- Clean pork belly, pig ears and chicken liver. Pour up to 6 cups of water on a deep pot. Add salt and let it boil.
- Drop the pork belly, pig ears and chicken liver into the boiling water. Bring it in to boil and let it cook for at least 50 to an hour, until tender.
- Remove from the pot, the start grilling all meat including chicken liver until browned or done. Chop all in small cubes. Set aside separately.
- On a large pan, sauté onion and garlic in butter until browned. Add chopped pork belly, pig ears & chicken liver. Stir to combine evenly.
- Add soy sauce, garlic, and finely chopped chili peppers(optional chili flakes), add salt and pepper and continue to stir. Let it cook for 15-20 minutes while constantly stirring.
- Remove from heat and transfer yummy Sisig on a serving bowl. Garnish with chopped onions and slices of calamansi or lemon and whole chili peppers on top. Serve this delicious Pinoy delicacy hot with steamed rice.
