It’s one of the classic dishes you can just about run into any Filipino gatherings or carenderias. Menudo recipe is usually made with pork belly, pork liver and hotdog. It’s stewed in tomato sauce and vegetables including carrots, green peas, potatoes, and raisins. Others cook it with bell peppers. It has a delicious taste that you’ll enjoy.

Ingredients: 3-5 servings

1 lb. pork belly cut in medium size cubes
1 cup pork liver cut in small cubes
1 can 400ml tomato sauce
2 cups water
1 tbsp. soy sauce
2 tbsp. cooking oil
1 small onion, chopped
3 cloves minced garlic
1/2 tbsp. sugar
1 large diced potato
1 large diced carrot
1/4 cup green peas
3 pieces sliced hotdogs
1/4 tbsp. seasoning granules
1 tsp black peppers
1/4 cup raisins
2 dried paprika leaves

Cooking Procedure:

  1. Place pork and pork liver in a pan and add water. Bring it in to boil until pork and liver are tender. Set them aside.
  2. Heat up oil on a pan, sauté onion and garlic, then add the pork and liver including its broth. Add potatoes, carrots, green peas and hotdog. Let it simmer for 3-5 minutes.
  3. Add and mix the tomato sauce, follow it up with the seasoning granules, sugar and black pepper. Continue to let it simmer for 10 minutes at medium to high heat while stirring occasionally until potatoes are fully cooked.
  4. Throw the raisins in, let it cook for 2 more minutes, and serve this delicious, homemade Menudo recipe with steamed rice.

Tip: You can choose to add green or red bell peppers to the dish as an option. Serve with steamed rice.
