It’s great to learn about the similarities and differences between Goto and Arroz Caldo, two popular Filipino rice porridge dishes. While both dishes are cooked in ginger and can have boiled eggs added to them, Arroz Caldo has additional ingredients like beef or chicken strips and more ginger. Goto, being a simpler version of the two dishes, is still a hearty and filling meal that’s perfect for colder evenings or when someone needs something comforting.

Cathy’s preference for less meat in her meals makes Goto a perfect option for dinner or even breakfast. Mark on the other hand, prepares a simpler way as he builds it from scratch, while always as enjoyable as it is with Cathy’s version.

Rice porridge dishes are a staple in many Asian cuisines, and it’s great to see how different regions have their take on this comforting dish. It’s always exciting to try different variations of rice porridge to see how each region incorporates their unique flavors and ingredients, whether it’s prepared for breakfast, lunch or dinner.

Ingredients: 2-4 servings

1 cup uncooked rice
17 ounces water about 500 ml
17 ounces chicken stock about 500 ml
1 piece chicken bouillon (optional)
2 tablespoons fish sauce
1 teaspoon garlic minced
1/2 teaspoon ground black pepper
1 cup onion minced
4 pieces hard boiled eggs
1 cup scallions green onions, minced
2 knobs ginger julienned
1 piece lemon or 4 pieces calamansi
¾ cup toasted garlic
2 tablespoons cooking oil

Cooking Procedure:

  1. Sauté garlic, onions and ginger, add a pinch of black pepper to season. Pour some water, then add fish sauce. Simmer for 3 minutes.
  2. Add uncooked white rice, stir thoroughly, add chicken broth and let it simmer while occasionally stirring for about 40 minutes until rice is fully cooked. Pour more water if needed.
  3. Add the boiled eggs then stir to completely mix ingredients.
  4. Remove Goto from the heat. Pour a bowl of the soup to serve. Garnish it with minced spring onions(scallion), toasted garlic, then squeeze small amount of lemon. Serve hot and enjoy!

Tip: You can add safflower if available for additional color and aroma.
