Simply made from scratch, Mark’s Homemade Fried Chicken is easy to prepare. Using chicken legs and thighs, marinated in citrus or vinegar and spices, then deep-fried until they’re crispy golden brown. Just a simple crispy on the outside, tender and juicy in the inside, homemade fried chicken recipe, for his family meal to enjoy.
Ingredients: 4-6 servings
3 lbs. chicken legs & thighs
1/4 cup Calamansi juice or lime juice
1/4 cup vinegar(optional)
1/4 cup soy sauce
2 cloves large, chopped garlic
1 tsp salt
1 tsp crushed black pepper
2 cups cooking oil
Cooking Instructions:
- On a bowl, combine chicken legs an thighs with Calamansi juice(use vinegars as an option), soy sauce, chopped garlic, salt and pepper. Leave it to marinate for at least 2 hours. Refrigerate or leave it a room temperature.
- Heat oil on a deep frying pan. On a shallow wide bowl, mix flour with a pinch of salt and pepper. Whisk marinade mixture thoroughly to combine evenly.
- When heated oil is ready, carefully drop each chicken, one at a time.
- Adjust heat temperature to high. Make sure oil is hot enough before dropping the first batch of chicken to fry.
- Deep-fry chicken until golden brown. Serve Homemade Fried Chicken hot with steamed rice, or any vegetable on the side.
Tip: Deep fried chicken serves as appetizers for Filipino social or family gatherings. Using vinegar as a substitute for marinade is as good. Maybe even better to some.
