Filipino Macaroni Salads are prepared sweet. Using elbow macaroni for its main ingredient, our delicious Filipino Chicken Macaroni Salad is creamy-sweet and cheesy-rich. It’s popularly served as snack, or dessert at any family or Pinoy social gatherings. Adding pineapple chunks, raisins and cheese cubes to me, is the exciting part of it. It’s one of my favorite desserts, and Cathy is good at preparing it. I usually ask her to make me some on many occasions.

Ingredients: 4-6 servings

1 pack(16 oz.) of elbow macaroni
1 lbs. skinless, boneless chicken breast
1 large peeled & diced carrot
1 can(14 0z) pineapple chunks
4-6 hard-boiled eggs
1/2 cup sweet pickle relish
1 cup Velveeta cheese in small cubes(other kinds of cheese is fine)
1 peeled, diced onion
1 cup raisins
1/2 cup sweetened condensed milk
1 1/2 cup mayonnaise
salt & pepper to taste
water for boiling

Preparation:

  1. First wash and clean chicken breasts. Apply water on a pot, bring water to boil while skimming excess fat on top. When cooked, cool chicken off, then shred it.
  2. Boil 4-6 eggs, peel the skin when cold, then slice them into small chunks.
  3. On a separate pan boil about 12-16 cups of water, add a pinch of salt and small drop of oil or butter, then pour the macaroni and cook for 8-10 minutes until their slightly soft, but firm to bite. Drain water through a strainer and set elbow macaroni aside.
  4. On another pot, boil water and add cook diced carrots for 30 seconds. Remove from water with a slotted spoon, or drain on a strainer. Place carrots into a bowl with ice chunks and immerge them to cold. Drain and set aside.
  5. On a large bowl, combine all ingredients starting with macaroni, chicken, carrots, eggs, crushed pineapple including packing juice, cheese cubes, sweet pickle relish, raisins, onions, mayonnaise, and sweetened condensed milk. Season with salt and pepper, then carefully stir to evenly combine all ingredients.
  6. Refrigerate for an hour or so to completely cool. Cooling delicious Filipino Chicken Macaroni Salad is preferable for more flavorful taste. Serve at parties and family gatherings! Or on your dinner table with loved ones.

Tip: You can add chopped celery or red and green bell peppers, for slightly-tangy taste, if desired.
