Based on scientific health researchers, broccoli is rich in healthy nutrients including potassium, selenium, magnesium, iron, dietary fibers and so much more. But broccoli has an adaptive flavor that even some older people are not so fond of. Missy’s Loaded Broccoli Cheddar Casserole could be a suggestive meal for all ages to enjoy. Ingredients: 6-8 servings
1 tbsp olive oil
1 lb broccoli florets
4 cups cooked rice
3 cups shredded cheddar cheese
1 red onion
1 1/2 cloves garlic
1 10.5 oz can cream of mushroom condensed soup
1/4 tsp paprika
1/8 tsp black pepper
Preparation:
- Preheat oven to 350 degrees Fahrenheit. Finely dice onion and garlic. If you are using fresh broccoli, set your broccoli florets in a steamer basket, then steam in a pot filled with 1-2 inches of water (about 10 min). If broccoli is frozen and already cooked, skip this step.
- Chop broccoli into 1/2 inch pieces. Add to a large bowl together with cooked rice and 2 1/2 cups of shredded cheddar (set aside the remaining 1/2 cup).
- Heat olive oil in a skillet over medium heat. Once oil is hot, immediately add onion and garlic, stirring frequently, until onions are tender.
- Add onions and garlic to the bowl with your broccoli, rice, and cheddar. Add cream of mushroom, paprika, and black pepper next, and mix thoroughly.
- Evenly spread mixture into a 9x9in oven-safe casserole dish. Top evenly with remaining 1/2 cup shredded cheddar.
- Bake Loaded Broccoli Cheddar Casserole for 35-40 minutes, or until the cheese is evenly melted and edges are golden brown. Cut into 6-8 portions, then serve it with a smile! 🙂
Tip: Decoratively set onion slices on top of cheese, as an option. They will remain visible after baking. Enjoy this broccoli and cheese recipe at your home.
