A good-to-the-last-bite snack! You’ll find them at almost every Filipino street vendor being sold in our hometown. Adobong mani(Salted Fried Peanuts) is made of dried peanuts, fried in a lot of garlic. Infusing them with high amount garlic and salt is basically what makes them so tasty, and they smell so good!

Ingredients: 3-5 servings

2 lbs. raw peanuts, shelled
2-5 whole garlic, cut in cubes
2 tbsp. fine salt
2 cups cooking oil

Cooking Procedure:

  1. Peel off all the garlics you desire to use, chop them into tiny cubes or use a mortar and pestle to crash them.
  2. Heat up the pan and pour a small portion of the cooking oil to fry the garlic till they’re golden brown. Remove and set aside.
  3. Pour the rest of the cooking oil to the heated pan, slowly pour the peanuts, stir fry for 20 minutes or until the peanut skins turn golden brown.
  4. When done, use a slotted slotted spoon to remove the cooked peanuts from the pan. Place them on a colander to drain excess oil. Transfer peanuts to a large bowl. Add the fried garlic, season with salt and mix them thoroughly. These salted, fried peanuts are good eaten slightly hot.

Tip: Use coconut oil as an option for better taste and aroma. Some would also add “siling labuyo” (Filipino chilis) to the mix for a more exciting taste. chili powder is an option if siling labuyo is not found.
