Millie’s delicious Mixed Berry Pie recipe is a combination of wild blueberries, blackberries and raspberries.. It’s been the Dickey family’s long time tradition, whenever she can, she bakes a variety of fruit pies for her family to enjoy. Although she oftentimes makes her own homemade pie crusts, every now and then, Millie makes a quick trip to the grocery store, to grab a couple of pre-made pie crusts and a bag of mixed berries, for convenience.
If you prefer a quick way to bake fruit pies to save time, while still enjoying the delicious taste of your pie, she recommends a Marie Callender, pre-made pie crusts. Bags of frozen mixed berries for baking, are available at the frozen section from any popular grocery store.
Ingredients: 4-6 servings
2 ready crusts from any bakery section
1-2 bags of frozen berry mix(blueberries, blackberries, raspberries)
2 tsp pectin or white sugar, your choice
2 tbsp. cornstarch
Baking Procedure:
- Set oven temperature to 375F. On a bowl, mix the berries with cornstarch and Pectin or white sugar if you wish to create a sweeter tasting pie.
- Pour the mixed berries on one of the ready crusts, remove the second crust from its tray, then cover the mixed berries with it. Fold the crust edges to seal the pie. Poke small holes on the top crust using a fork to allow the steam to escape from inside, therefore preventing pie crust to pop and destroy the pie.
- Brush the cover crust with egg yolk. This will produce a shiny brown look on the crust when pie is done. Place pie in the middle rack of the heated oven, bake it up to 40 minutes. Crust will appear golden brown and crusty when perfectly baked.
- Turn off oven and take Mixed Berry Pie out. Serve it warm or at room temperature. Cut a piece when ready, apply a scope of ice cream on top prior to serving. Bon Appetit!
Homemade Pie Crust Bonus Procedure:
Ingredients: 2 pie crusts
2 1/2 cups quality all purpose flour
1 tbsp. granulated sugar
1 tsp salt
1 cup cold butter in cubes
1 tsp of apple cider vinegar
1/2 cup of cold water
Direction:
- First, mix all the dry ingredients. Follow it up with the butter cubes, water and vinegar. Combine thoroughly until mixtures turn into a heavy dough and harder to mix.
- Use hands to knead dough thoroughly. Add more water if dough starts to dry and separate. Dough has to be moist, but should not be sticky.
- Continue to mix ingredients with your hands until you form a soft to hard but moist dough. Place the dough on a flat surface, cut dough in half and form each in a flat circle. Wrap each in a plastic wrap, then refrigerate for an hour.
- When ready, roll each dough with a rolling pin until you form a thin, flat circle. Using a standard round pie plate, place the flat dough on top and press them carefully onto the pie plate surface, forming the plate’s shape.
- Fill out the pie crust with the fillings you desire to bake. Carefully place the second crust on top, then seal it by pressing the crust edges around the plate.
- Trim the edges of the crust, leaving about an inch overhanging. Use your fingers to fold the crust edges, then it’s ready for baking.
Tip: Refrigerate unused pie crust or freeze them if they are not for immediate use. Enjoy your juicy homemade fruit pie!
