Ingredients: 4-6 servings

1 pack flat egg noodles
1 cup pea pods(chicharo)
1/2 small thinly sliced cabbage
2 large sliced carrots
3-4 medium sliced mushrooms
2 pieces chicken breast in small cubes
1/2 medium cubed onions
3 cloves minced garlic
1 scrambled egg(optional)
1/4 cup chopped spring onions(chives)
salt & pepper to taste
2 tbsp. cooking oil
Water

Cooking Procedure:

  1. Boil water on a medium size pot, add a small amount of cooking oil and a pinch of salt. When it starts boiling, set the fire to medium, add the flat noodle to let boil for about 10 minutes or less.
  2. Flat noodles texture should be soft to pinch and separated from each other, when cooked. Transfer noodles on a strainer.
  3. Set the noodles aside while keeping it warm by placing it on the top of the still-hot pot, but make sure the noodles are elevated from the hot water to prevent it from overcooking.
  4. Heat cooking oil on a skillet. Sautee garlic and onion followed by the chicken, then add salt and pepper. Stir ingredients to mix, let it simmer until meat is cooked.
  5. Try a taste test to ensure salt and pepper are just right. Ensure that the chicken is cooked prior to adding vegetables.
  6. Add Carrots, stir and let it cook with the first ingredients, but keep it slightly crunchy and not overcooked.
  7. Add the rest of the vegetable mix. Combine thoroughly, then let it simmer for at least 3 minutes or until all vegetables are fairly cooked.
  8. Adjust the fire to low heat, add the noodles and mix gently but thoroughly with the rest of all ingredients.
  9. Add a fairly small amount of the water from the pot where noodles were boiled. Turn off heat but keep ingredients warm by keeping it on the warm stove.
  10. On a heated pan, create a scrambled eggs. Cut it in thin slices, then add them to the cooked, Flat Egg Noodles Pansit Guisado). Garnish it with chopped spring onions(chives). Serve this flavorful, Chicken Pansit Lomi Guisado, hot!
