Ingredients: yields up to 6-8 pieces
3 ripe mangoes, cut in small cubes
1 bag of frozen cherries(available in any grocery frozen sections)
1 tablespoon of Vanilla
1/2 can of Fruit Pectin
1/2 cup of white sugar (if you prefer a much sweeter pie taste)
Directions:
- Start by defrosting two ready pie crusts and set them aside. Defrost and drain the pitted fruit cherries. Save the juice in a bowl and add cornstarch until it’s dissolved in the juice. Set this aside.
- In a separate bowl, mix the cubed pieces of mangoes and cherries along with all the other ingredients. Fill the first tray of the ready pie crust with the mixed fruit ingredients.
- For the second tray, remove the pie crust from the tray and lay it on top of the mixed ingredients to cover the pie. Seal it with your fingers by pressing the sides and cut the remaining dough with your fingers or a fork.
- Make some holes on top of the pie crust to allow the pressure from the juice or air to release as the pie bakes, to prevent the juice from overflowing.
Bake at 375 degrees Fahrenheit for 45 minutes or until the pie is golden brown. Serve warm or cold, with a scoop of ice cream or a dollop of whipped cream as desired.
NOTE: If you are not a fan of sugar, you can make this a Zero Sugar Cherry and Mango Pie by eliminating the 1/2 C of sugar from the ingredient list. The fruit pectin added to the recipe helps enhance the natural sweetness of the fruits.
