Ingredients: yields up to 8-10 slices

Fillings:

2 ripe, sliced bananas
2 cups of ripe mango puree
1 cup of heavy whipping cream
2/3 cup of white sugar
1/4 cup pf cornstarch
2 tbsp. of cornstarch
4 egg yolks
1 tsp of vanilla extract
2 tbsp of butter

Toppings:

1 cup heavy whipping cream
1 tsp of vanilla extract
1/ 1/2 tbsp of powdered sugar
sliced bananas for garnishing
2 passion fruits, halved

Graham Cracker Crust:

1 1/2 graham cracker crumbs, save 1-2 tbsp for garnishing
6 tbsp melted butter
1/3 cup of sugar

Instructions:

  1. Preheat the oven to 350°F (175°C). Combine graham crackers, melted butter and sugar. Place thr mixed ingredients on a 9-inch baking pan, bake  it for 7 minutes, or until lightly golden. Remove from the oven and set aside to cool.
  2. Once graham cracker crust is cooled, arrange slices of ripe bananas on top and corners of the crumbs.
  3. Place a medium saucepan over a heated stove, combine milk, cream, sugar, salt and cornstarch, whisk them together until sugar is melted and the mixture bubbles. Continue to stir for at least 2 minutes.
  4. In a separate mixing bowl, whisk egg yolks together. Separate 1/2 cup of the hot mixture prior to whisking the beaten egg yolk into it.
  5. Slowly tream egg yolk mixture onto the hot mixture while you continue to whisk them together on the saucepan, until the mixture is bubbling.
  6. Cook for 2 minutes while constantly whisking them together, until they appear fairly thick, leaving a trail of the whisk as you drag the whisk through it. Also, it would slightly pile as a really thick pudding once poured onto the pie crust.
  7. Remove the mixture from the heat, then, while still on the suace pan, apply vanilla extract and butter while continuing to whisk mixture together. Let it cool for 15 minutes while whisking it more to avoid a skin from forming.
  8. Pour the pudding mixture on top of the sliced bananas that you previously arranged on top of the crust. Cover with a plastic wrap, then leave it in the fridge for approximately 5 hours.
  9. In a small saucepan, mix the cornstarch and water together until the cornstarch is dissolved. Heat the mixture over medium heat, stirring constantly, until it thickens and becomes translucent. Remove from heat and let cool for 5 minutes.
  10. While waiting for the pudding to cool off, place a bowl and beaters in the freezer, let it chill for at least 20 minutes. Remove and use the bowl to mix the whipping cream, powdered sugar and vanilla together with the chilled beater.
  11. Beat the mixture on low to an increased volume. Adjust the beater to medium-high, continue beating mixture until stiff rises its form.
  12. Spread the whipping cream over the top of the chilled Banana-Mango Cream Pie. Garnish the top with extra banana slices, spread some reserved graham cracker crumbs. Lastly, evenly spread out passion fruit on top of the pie. Serve chilled and enjoy!
