Millie’s perfectly blended, moist and fluffy delicious Pineapple Upsidedown Cake recipe is one of the family favorites! Topping:

4-6 pieces of canned pineapple slices, or as desired
4-6 pieces of Maraschino cherries in a can(depending on how many pieces of pinapple slices to fill)
4 tbsp. melted butter
1/2 cup brown sugar

Cake Ingredients: 8-10 servings

11/2 cups of all-purpose flour
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/3cup of milk
1/4 cup of pineapple juice
1/4 cup of sour cream
1 tsp. vanilla extract
1 stick of unsalted butter, softened
3/4 cup of white sugar
2 large eggs

Baking Preparation:

  1. Pre heat oven to 350F. Drain excess juice from the sliced pineapples.
  2. Pour melted butter on a 9inch cake pan, at least 2 inches deep. Brush butter up the sides to prevent cake from sticking
  3. Sprinkle the brown sugar over the base evenly. Use brush to spread it evenly
  4. Place the sliced pineapple to cover the whole baking pan or however you want it to look like. Insert Maraschino cherries on the center of the ring of the pineapple slices. Set aside.

Batter:

  1. Flour mixture: Whisk Flour, Baking powder, baking soda and salt on a deep bowl.
  2. Whisk the liquid ingredients (milk, sour cream, pineapple juice and vanilla extract) on a separate bowl.
  3. Cream butter and sugar on another bowl. Beat 2 minute on a speed cycle until fluffy. Add eggs one at a time beating for 20 seconds in between.
  4. Add flour mixture alternating with the milk mixture. Add 1/3 of the flour, then mix using a rubber spatula.
  5. Add 1/2 of the milk mixture, apply half of the remaining flour mixture. mix again, then add all the remaining last flour mixture. Mix thoroughly to completely incorporate ingredients.

Baking Pan Preparation:

  1. Spread batter over pineapple layer, Smooth and level the surface and bake for thirty minutes,
  2. Remove, loosely cover with foil, then bake for 15 minutes until toothpick or a tiny, long stick inserted into the center of the cake comes out clean but moist.
  3. Cool for a few minutes before flipping the cake upside down into a clean Cake Dish
