Ingredients: 3 servings

1 bundle asparagus
1 package prosciutto
Lemon zest (optional)
Fresh parmesan cheese, grated (optional)
1/2 garlic clove (optional)
black pepper (optional)
3 tbsp. olive oil

Cooking Preparation:

  1. Dice 1/2 garlic clove into 4-6 small pieces, and simmer in a saucepan with olive oil over low heat for about 15 minutes, stirring occasionally. Remove from heat, then mash garlic with a fork or spoon.
  2. Allow to cool completely (about 20-25 minutes) then strain the garlic infused oil through a sieve (you should not have any garlic pieces remaining in the oil). Set aside.
  3. Preheat oven to 400 degrees Fahrenheit, and prep a large sheet pan with parchment paper.
  4. To prep asparagus, cut the “woody” ends off (about 1/3 to 1/2 of the asparagus) and throw away, using only the heads.
  5. Tightly wrap 3 asparagus stems together with each slice of prosciutto. Lay each garlic prosciutto wrapped asparagus down on sheet pan, then drizzle evenly with garlic-infused olive oil.
  6. Bake for 10 minutes, or until asparagus is soft and prosciutto is crispy.

To serve: (optional) top with lemon zest, fresh grated parmesan cheese, and a sprinkle of black pepper.
