Caldereta, or Kaldereta, is a famous Filipino beef stew originating from the Tagalog region’s southern part. Traditionally made with goat meat, this hearty dish has evolved and is now commonly made with beef, pork, or chicken as an alternative meat ingredient. The dish is known for its rich and flavorful tomato-based sauce and a unique ingredient that sets it apart from other stews: liver paste.

Caldereta is typically made with various vegetables such as tomatoes, potatoes, olives, bell and hot peppers, and tomato sauce. Combining these ingredients creates a complex and delicious flavor profile many Filipinos love. Ludwig’s Beef Caldereta recipe puts a unique twist on this classic dish. Instead of using a liver paste, he opts for peanut butter, which provides a creamy and nutty flavor that complements the savory sauce. Additionally, he adds a pouch of Caldereta seasoning to enhance the dish’s overall flavor and aroma.

The beef is first sautéed with garlic and onions until it is browned to make the dish. The peanut butter is added to the mix, along with the Caldereta seasoning, tomato sauce, and a bit of water. The mixture is simmered until the beef is tender and the sauce has thickened. Finally, the potatoes and peppers are added and cooked until tender. Ludwig’s Beef Caldereta recipe is a delicious and unique take on a classic Filipino dish. Adding peanut butter provides a subtle twist to the dish, while the Caldereta seasoning enhances its flavor and aroma. 3. Apply water and bring the mixture in to a boil for up to at least 30-45 minutes, or until beef is fork tender. Add the red bell pepper cubes and let it simmer for another 3 minutes. Serve hot with steamed rice. Enjoy!
