Ingredients: 3-4 servings

1 small Cornish hen chicken
2 cups brown rice
4 cloves chopped garlic
3-4 boiled eggs
12 boiled quail eggs(optional)
1/2 medium onion chopped
1 small cube of sliced ginger
2 stalks bok choy leaves
salt & pepper to taste
4-6 cups water

Cooking Procedure:

  1. Wash and cut Cornish hen in cubes, then set aside. Pour 4-6 cups of water for the brown rice, 1-2 for eggs on separate pots, start boiling both simultaneously.
  2. Heat up oil on a pan and start sautéing onions, garlic, add the chicken, then stir to mix for 5 minutes, sprinkle a small amount of salt and pepper, drop the ginger and simmer for another 5 minutes, then set aside.
  3. Check the rice, add the sautéed chicken and follow it up with a pinch of salt and pepper. Cover and let it simmer for another 10 minutes. Take the boiled eggs out of the pan and peel off shells when fully when cool to touch.
  4. Check the boiling Arroz Caldo next, drop the eggs and add bok choy. Stir and let it boil for another 3 minutes. Turn heat off, then serve Cornish Hen Arroz Caldo, hot.
