Filipino Fried Rice with Oyster Sauce
Rice is the staple food of the Filipinos and no feast is complete without rice. Rice is usually combined with other Filipino dishes to create an appetizing meal. Even though fried rice is usually a Chinese dish, the Filipino version of fried rice is just as delicious. Here is a basic version of Filipino Fried rice.
Ingredients for 3-5 Servings:

| 4 | cups | Rice, cold and cooked (left-overs) |
| 4 | tbsp | Vegetable or Corn Oil |
| 2 | tbsp | Garlic, Minced |
| 1/2 | cup | Green Onions, chopped |
| 1/2 | cup | Carrots, chopped |
| 1 | tbsp | Oyster Sauce |
| 1 | tsp | Salt |
| 1 | tsp | Pepper |
| 2 | Large | Eggs, scrambled and chopped |
Preperation
- Heat the oil in a wok or frying pan, then add the garlic until fried brown. Add the rice, oyster sauce, salt and pepper as desired to taste. Stir the mixture constantly to prevent the rice from sticking to pan and to ensure even cooking of the rice.
- When the rice is heated through, add the onions, carrots, and eggs and cook until the rice starts turning brown. Serve the Filipino fried rice hot, garnish with cilantro or mint leaves.
